Eat Like a Local: The Best Casados in Town
There is a distinct comfort in a traditional Costa Rican casado after a long morning in the ocean. Sámara isn’t a town of sterile franchises; it’s a community fueled by family run kitchens that have been perfecting their recipes for generations. Skipping the tourist heavy beachfront strips and turning down the side streets rewards you with perfectly seasoned black beans, sweet plantains, and fresh catch of the day fish. In this guide, we are sharing three of our absolute favorite neighborhood sodas where the food is authentic, the portions are generous, and the faces are always welcoming.
1. Soulara Soda
Location: On Property at Soulara
You don’t have to wander far to find the authentic taste of Guanacaste. Located right here on our property, Soulara Soda is our tribute to traditional Costa Rican home cooking. We source local ingredients to craft a classic menu that hits the spot whether you are gearing up for a jungle hike or winding down from a surf session. Our kitchen specializes in hearty casados piled high with fresh sides, rich arroces (mixed rice dishes), comforting sopas, and citrus bright ceviches made from the morning’s local catch. It’s the perfect place to grab a bite, enjoy the breeze, and fuel up for your next adventure without leaving your sanctuary.
2. Soda La Perla
Location: End of Playa Sámara in Cangrejal
Tucked away near the end of the beach, Soda La Perla is exactly what you hope to find when looking for a local gem. Known for its laid back, cozy atmosphere and incredibly cheerful service, this family owned eatery is a staple for both locals and seasoned travelers. Their portions are famously generous, and the value is unmatched in the area. If it’s your first time visiting, order the chicken or fish casado. It is widely considered one of the best in town. Don’t forget to pair your meal with one of their freshly blended natural fruit smoothies. Keep in mind that local sodas often prefer cash, so it is always smart to bring some colones along.
3. Soda El Buen Sabor
Location: Canto de los Gavilanes
True to its name Soda El Buen Sabor (“The Good Flavor”), delivers an unpretentious, incredibly flavorful dive into Costa Rican culinary staples. This is the spot to visit when you want to eat exactly how the locals do. It’s a rustic and welcoming environment where the ingredients are fresh and the recipes are authentic. Their gallo pinto is a fantastic start to the morning, but their lunchtime casados steal the show with perfectly seasoned rice, savory beans, sweet maduros (plantains), and tender meats. It is the definition of “Pura Vida” dining…simple, delicious, and made with heart.
